  砂仁的食用方法

  (一)砂仁肘子

  养生食疗功效:温脾止泻,调中安胎,适于脾胃虚弱、食欲不振、病后体虚者食用,孕妇尤宜。 


   砂仁多于秋季果实成熟(多于8月中下旬,当果实表面颜色由红紫变红褐.果肉呈荔枝肉状,种子红褐色,嚼之有浓烈的辛辣味时)时剪下整个果穗,地道产区多用焙干法加工,经“杀青”、“回炉”、“复炉”三道工序,因经多次低温烘干,又经一些特殊工艺使砂仁香气浓,且果皮与种仁紧贴。其他产区多用晒干或烘干法,产品多散果,皮仁分离,香气亦差。绿壳砂和海南砂亦为将果穗剪下后晒干或烘干。进口的绿砂仁有的将总果柄除去,商品为“壳砂”;如再加工剥去果皮则为“原砂仁”;完整的种子团,经筛选大粒的称为“砂头王”或“砂头”;散粒种子为“砂米”;剥出的果壳为“砂壳”。

    加工:分以下几种方法
    1.焙干法  分“杀青”、“压实”和“复火”三个工序。即将鲜果摊在竹筛上,置于炉灶上以文火焙于。燃料用谷壳、生柴或木炭火,最好用樟树叶盖在火上,使其只生烟不生明火。如此熏焙出的砂仁,气味浓质量佳。当焙至果皮软时(约五六成于),要趁热喷1次水,使皮壳骤然收缩,于后皮肉紧密无空隙,可以长久保存不易生霉。
    2.晒干法  分“杀青”和“晒干”二个工序。一般用木桶盛装砂仁,置于烟灶上,用湿麻袋盖密桶口,升火熏烟,至砂仁发汗(即果皮布满小水珠)时,取出摊放在竹筛或晒场上晒干。
